Created after a big night of drinking and still cloudy vision, It’s got a few special Danish ingredients in and a whole load of very juicy and aromatic US hops. With a generous amount of dry hopping. So get ready to look out for Samarbejds Ødelæggelse IPA. The name is roughly translated as Collaboration Carnage, and is a fitting description

Black Rocks is a Black IPA. It is very dark in colour, yet has many characteristics of an India Pale Ale. Late mash additions provide the colour without the harsher, roasted flavours of the dark malts. The beer has a blackcurrant aroma and flavours of liquorice and pithy grapefruit

Our first forray into Barrel Ageing beers, and our first Special Reserve.
This Special Edition of our regular brew “TSAR” has been aged on oak for six months prior to bottling to impart extra flavour, aroma and character.
Huge flavours of roasted malt, chocolate and molasses combine with a little spice and the signature Buxton hop presence. Further complexity is added from the barrel ageing, bringing notes of vanilla, sweet oak and plums.
Only 112 bottles of this beer ever existed, if you have one, you are lucky. They were filled by hand on Thursday August 2nd, 2012 - during the London 2012 Olympic games.

An Imperial, Smoked Rye Porter evolved from the recipe book of JK; our Head Brewer. Mashed with malt smoked over a scottish peat burning fire, this beer has a lovely smokey, phenolic and slightly spicy character. Reminiscent of bonfires and Islay whisky.
Almost all gone, get it while you can and drink it whilst the smokey character is still prominent.

In 1978, The Courage Brewery brewed a batch of Imperial Russian Stout, aged it in infected, wooden Hogsheads and some time later…. it was put into bottles.
34 years after that, we opened a bottle, drank the beer (which was amazing) and rescued the intruiging combination of sedimented yeasts and debris from the bottom of the aged vessel. We then inocculated a barrel of our own Russian Imperial Stout – TSAR with this precious sludge and left the beer to its own devices for 9 months. The only attention this beer got from us was a weekly roll-around-the-brewery, just like the Courage Hogsheads got.
Following this 9 month ageing, the beer that we now tasted had changed in character remarkably. The familiar landmarks were still there – huge body, chocolate, molases, but now there was so much more. The Brettanomyces strain of yeast that had laid dormant in the bottle all those years had re-awakened when dispersed amongst our young, fresh Imperial Stout, and had gone to work with vigour. Boosting the ABV by a further half-percent, and adding a delicious, trade-mark tartness to the beer, complimenting its hop bitterness and deep malty and dark fruit flavours.
The Tsar Bomba was born.

Back in August 2012 they brewed a little 2.8% Berliner Weisse. Its been sitting patiently over the intervening months as the Lactobacillus we inocluated it with has slowly but steadily worked its sour magic.
They plan this beer to be available in the late spring of 2013 - They don’t want to rush it, plus, they think this will be a beautiful beer to drink on a warm early summer evening. (and for us winter)
